Matcha energy balls

mood boost ~ energising ~ blood sugar balanced

Matcha has been shown to have stress-reducing effects in the body — it is packed full of antioxidants as well as natural compounds like chlorophyll and L-theanine, which have a physically-relaxing effect

What’s more L-theanine activates the release of GABA (a neurotransmitter) from the brain which has even more of a calming and mood-boosting effect!

Energy balls are traditionally made with dates, but to keep these blood sugar friendly, I’ve replaced dates with naturally sweet ingredients that are higher in protein & fibre to prevent those big spikes…

Just a thought, you could even dip these in melted cacao for an extra stress-reducing boost of magnesium!

Ingredients

  • 1 cup ground almonds

  • 1 cup desiccated coconut

  • 1 tsp matcha powder

  • 2 tbsp collagen powder

  • 1 tsp honey

  • 2 tbsp coconut oil

Method

Add all your ingredients to a bowl and mix them together ~ if the mixture is too dry, add a dash of milk

Place the mixture in the fridge for 10 minutes to make it easier to roll (although this step is not totally necessary)

Take a tablespoon amount and press it together in your hands so they come together and roll into balls

I like to roll some in extra dessicated coconut and leave others as is!
