Beetroot tahini dip

anti-inflammatory ~ anti-oxidant rich ~ gut-friendly

A great one to have in the fridge for a quick and easy way to add an extra colour to your plate (one of the best ways to boost your gut health)

What’s more, beetroot is high in nitric oxide which has been shown to have a beneficial effect on anxiety-related stress!

Ingredients

  • 1 medium beetroot

  • ¼ cup tahini

  • 2 tbsp olive oil

  • 1 garlic clove, crushed

  • ½ lemon, juiced

  • Salt and pepper, to taste

Method

Preheat the oven to 180°C. Wrap the beetroot in foil and roast for 40-45 minutes or until tender. Allow the beetroot to cool, then peel it - the skin should come off easily with a spoon

Quarter the beetroot, add it with the tahini, olive oil, garlic, lemon juice, salt, pepper and 60ml of water to a small food processor or blender

Process or blend until smooth
