Green pancakes

— gut-friendly ~ high fibre ~ low sugar - immune-supporting —

I definitely feel my best energy wise when I stick to a savoury, protein-rich breakfast but some days my usual eggs just don’t cut it ~ what’s the solution? Turning the same ingredients into pancakes 💚

I’ve also added in some baobab powder, parsley, mint + ginger and topped them with coconut yogurt and bee pollen for that little bit of extra immune support!


Ingredients

  • 1/2 cup vegetables ~ I used a mix of courgette and peas, but roasted squash / sweet potato also works great

  • 2 large eggs

  • 1/4 cup coconut flour

  • handful of parsley and mint

  • knob of ginger

  • 1/2 tsp baobab powder

  • 1 tsp baking powder

  • Toppings of choice: COCOS coconut yogurt, Raw Pot bee pollen, cacao nibs + tahini for me!

Method

Blend the veg, eggs and herbs together + then whisk in the flour and baking powder

Heat up your pan and cook for a few minutes on either side (wait until you start seeing bubbles forming before you try to flip them)

Top with your favourite bits and you’ve got yourself a dreamy stack of pancakes!
