Gut-loving herby green pesto

Did you know one of the best ways to support your gut health is by eating lots of different plants? The recommendation is to aim for 30 different plants a week, but achieving this can feel a little overwhelming

That’s where herby “pestos” come in (a term I use loosely as I appreciate it is very far from traditional pesto recipes!) ✨

By blending a mix of herbs, these are such an easy way to pack in different plant points! And you can truly use ANY greens, which means you can rotate what you use each week depending on what you have in the fridge

Whether it’s on pasta, in sandwiches, mixed through beans, used as a dressing for potatoes or a marinade for fish, incorporating herby pestos is a delicious (and equally nutritious) way to support your gut health 🫶🏼

Ingredients

  • carrot tops, basil, parsley and a few springs of mint - around 150g in total

  • juice and rind of one lemon ~ for antioxidants and vitamin C

  • 1/4 cup extra virgin olive oil ~ healthy fats to help you absorb the nutrients from the greens

  • 1 clove garlic ~ supports the immune system

  • 1/4 cup pistachios ~ almonds or pine nuts would work great too


Method

Add all your ingredients except the nuts to a blender, blend and then add the nuts and blend again ~ I find adding the nuts separately helps keep the vibrant green colour


Store in the fridge with a layer of EVOO on top and you’re all set for the week!
