Lemon, Ginger and Honey Gummies
— gut-healing ~ immune supporting ~ anti-inflammatory —
Homemade gummies are one of my favourite gut-healing and nutritious snacks to have on hand! There are endless flavours and variations you can make but I’ve had this combo on repeat for the last few months to support my immune system
We know that 70% of our immune system is found in the gut, so healthy gut = stronger immune system. This is where the gelatin comes in ~ it is a great source of protein and it has been shown to protect the gut lining
Lemon, ginger and honey is then an age-old combo (for very good reasons) to support your immune system as they’re rich in vitamin C and antioxidants. Opting for raw honey also means the natural benefits of honey (aka its mix of nutrients, enzymes and bioactive compounds) are preserved
Ingredients
2 cups filtered water
2 lemons, juiced (around 1/2 cup)
1-2 inch piece of ginger (around 30g), peeled and grated or finely chopped
2-3 tbsp of raw honey (I use Raw Pot)
1/4 cup grass-fed gelatin (I love Ossa Organics ~ use GDOCUMENTED for £10 off your first order)

Method
Add 2 cups of filtered water to a pan and bring to a boil. Add the ginger, cover and turn the heat down, leaving it to simmer for ~10-15 minutes.
While this is simmering, add the gelatin to the squeezed lemon juice in a heatproof bowl to bloom (aka absorb into the juice) ~ this usually takes around 5 minutes.
Strain the ginger liquid and add this to the gelatin and lemon juice + whisk together (you can do this by hand or in the blender). If you have any clumps of gelatin, press them against the side of the bowl with a spoon to squish them so that they dissolve more easily.
Once the mixture is fully combined and the gelatin dissolved, whisk in the raw honey ~ you don’t want to add this in at the start as heating it can destroy some of the nutritional benefits.
Pour the mixture into silicone moulds or a glass pan and place in the fridge for ~ 4 hours to set. Cut, store in the fridge + enjoy!
